Jean Touitou begins a new chapter with Banibano. Founder of A.P.C. in 1987 and born in Tunisia, he presents a first cuvée produced in Cap Bon from Muscat of Alexandria grapes. The project follows a personal and cultural continuity, shaped by a long-standing relationship with the Mediterranean, its landscapes, rhythms, and traditions.
The birth of Banibano is rooted in close collaboration with Jean Boujnah, a historic figure in Tunisian viticulture. His field experience and deep knowledge of local practices played a decisive role in the development of this cuvée. Together, they worked with naturally cultivated parcels, favoring simple methods and a direct reading of the grape, with no added sulfites. The aim was not to produce a demonstrative wine, but to accompany what the grape variety and the place themselves could express.
The Cap Bon vineyard benefits from sandy and limestone soils. This composition encourages drainage while retaining mineral elements essential to grape ripening. The Mediterranean climate, tempered by maritime influence, helps regulate temperatures and contributes to the overall balance. These conditions create a setting well suited to a precise expression of Muscat.
On tasting, Banibano, Jean Touitou’s childhood nickname in Tunisia, reveals a floral aromatic profile with notes reminiscent of jasmine and orange blossom, characteristic of Muscat from Kélibia. On the palate, the wine is dry and restrained, carried by a light structure and a clean, precise feel. The overall impression is simple and direct, with a clear, readable connection between soil, climate, and grape. More than an isolated project, Banibano reflects an approach attentive to origins, long timelines, and craftsmanship. It proposes a way of viewing wine as a natural extension of a broader sensibility toward materials, gestures, and transmission.
